Tim and Amy's Wedding




Wow I have had no time to blog lately and I love it!  But I have to blog about Tim and Amy's wedding.  It was so wonderful.  Such a beautiful day.
 

Well as you can tell, Amy looked stunning.  They were such a beautiful couple.  The love that they have for each other just filled the room.  Their temple ceremony was filled with so much happiness and love.  I am so proud of Amy and I love her so much.

 
So it was raining quite a bit but you wouldn't even be able to tell because they were still so happy.

 It was a little stressful trying to keep the kids happy outside in the rain for the pictures but we made it.

 All you could hear while the kids were walking down the aisle was Sarah and Sam sobbing because they wanted their Dad.  Didn't turn out quite how we wanted it to but oh well.  Danny took it so seriously.

I am so happy that you are the Father of my children.  We are so lucky to have you!  Every single one of the kids would much rather spend their time with you than me and I am totally ok with that.

Miso Salmon

This might be my favorite dinner that I make.  My family loves it!!! It is from Cheesecake Factory.

Miso Salmon
1/4 C brown sugar, packed
2 T soy sauce
1 t. ginger
2 T hot water
2 T miso (yellow soybean paste, ask someone at the grocery store where to find this)
2 C uncooked rice
1 C fesh snow peas
4 salmon fillets

Sake Butter
2 T peeled, julienned ginger.  Or if you are lazy like me, I just use 1 or 2 t. powdered ginger
3-4 garlic cloves, minced
1 T unslated butter plus 1/2 C cold unsalted butter
1/2 C plus 1 T Mirin (found in the Asian section at the grocery store) Usually good sake is used but I didn't want to go to the liquor store for it so my friend, Barbie suggested using this instead and I love it!!
1 T heavy cream (I just use skim milk and it works great)
1/2 t. fresh lime juice

Directions:
Cook rice.  Combine first 4 ingredients and whisk.  Arrange fish on a baking dish coated with cooking spray.  Spoon miso mixture over fish.  Bake fish at 375 degrees for 30-40 minutes or until golden and flakes off easily with a fork.
sake butter:
In a small saucepan over medium heat, cook garlic and ginger in 1 T butter for 2-3 minutes.  Add 1/2 C mirin and bring to a boil for about 3 minutes.  Add the heavy cream or milk and boil for about 2 minutes.  Add the pieces of cold butter to the sauce one by one, whisking over medium high heat.  Once all the butter is incorporated, remove the pan from the heat.  Whisk in remaining 1 T of mirin and lime juice.
Place Sake butter on plate, top with a bed of rice and snow peas, place salmon on top of rice.

Tim and Amy's wedding dinner

 Tim and Amy had their wedding dinner and it was such a blast!  Seriously, the people who marry into my family need a sense of humor to enjoy us and we definitely display that at these wedding dinners.  Half the time I felt like I was at a comedy club because all of the jokes.

Going through the Temple with Amy

I was lucky enough to go through the temple with my family because Amy got her endowments taken out.  I was so sad that Brian couldn't be there but we couldn't find a babysitter so he was sweet enough to stay home with the kids.  It was so much fun having all of my family there.  I love the temple.


I am so happy for you two!

We went to Cheesecake Factory after the temple.  It was delicious.  I loved sitting with my sisters and Mom during the temple.
